Started in a rented commissary kitchen in Balkumari, March 2025. Still there, three units bigger.
Everything tasted fine and fell apart wrong. Nineteen months of that. The breakthrough wasn't a flavour — it was a shear cell borrowed from a polymer lab two floors down.
Plant protein has never had a taste problem. It has a structure problem. Meat pulls apart in strands because muscle fibre is aligned; most plant protein crumbles because it isn't. Every product on the market was solving the wrong half.
A shear cell — a machine that spins protein under pressure until it lines up — fixed it in an afternoon. It had been sitting in a materials lab in the same building for eleven years.
We are not a technology company that discovered food. We are three people who cook, who got obsessive about one specific failure, and who now cook every batch by hand before it ships.
That last part is not a marketing line. It is a bottleneck, it costs us money, and we have no plans to stop doing it.
Three of us, one rented commissary kitchen, and a spreadsheet of 140 formulations that all failed the same way.
Formulation 96 holds its structure through a sear. We eat it standing up and nobody says anything for a minute.
First cold-chain run to four cities. Two arrive warm. We rebuild the entire logistics plan around it.
Seven products, the Valley and beyond, and a lease signed on Jhamsikhel for something we have wanted since the beginning.

Sourcing, cold chain, the fourteen-city route map and the reason two shipments arriving warm turned into a rebuilt logistics plan.
That this is health food. It isn't — it's processed food, and a plate of dal and rice beats it on almost every measure. What we will claim is narrower and true: no cholesterol, no antibiotics, a fraction of the water and land, and a complete amino profile.
If you eat meat four times a week and swap two of them, that is the whole pitch. We don't need you to become anything.
